Here is the recipe I used for the spinach and mushroom quiche, which was quite delicious.

Makes: 6 servings
1 cup sliced fresh mushrooms
1 onion, chopped
1 pkg. (10 oz.) frozen chopped spinach, thawed, drained
4 eggs
1/3 cup milk
1/3 cup mayonnaise
1 cup shredded mozzarella cheese
1 frozen pie crust (9 inch), thawed
1/4 cup bacon bits
- Heat oven to 375 degrees.
- Cook mushrooms and onions in a large nonstick skillet sprayed with cooking spray on medium-high heat 5 minutes or until crisp-tender. Remove from heat and stir in spinach.
- Beat eggs, milk, and mayonnaise in a medium bowl with a whisk until well blended. Add spinach mixture and cheese and pour into crust. Top with bacon bits.
- Bake for 50 minutes or until center is set and top is golden brown.
